Ingredients
Stir Fry Topping
1 tablespoon sesame oil
4 oz sliced water chestnuts
4 oz sugar snap peas
4 oz sliced mushrooms
1 red bell pepper, sliced
1/2 bunch of green onions
2 cups fresh broccoli florets
4 cloves of garlic, minced
1/8 cup minced fresh ginger
(You can use frozen vegetables if desired)
Stir Fry Sauce
1/3 cup soy sauce
1/4 cup sesame oil
1 tablespoon cornstarch
Other Ingredients
1 cup cooked white rice
4 eggs
Yum Yum Sauce
2 chicken breasts cooked and diced.
Directions
Preheat oven to 450
Cook rice.
Heat a large skillet medium high heat with sesame oil until hot.
Add water chestnuts, sugar snap peas, mushrooms, bell pepper, green onions, broccoli, garlic, and ginger.
In a separate bowl, mix together soy sauce, sesame oil, and cornstarch.
Cook for 15 - 20 minutes (make sure you stir frequently). Vegetables should be softer but not too soft.
Add the soy sauce mixture and cook for another 3 to 5 minutes.
When the vegetables are done, put to the side and add the rice & 4 eggs to the same pan. Mix and cook rice until eggs are cooked thoroughly (5 min).
Roll out dough and top it with yum yum sauce, rice, chicken and vegetable mixture.
Put in the oven and cook for 9-12 minutes.
Serve immediately.
