Pierogi Pizza

Ingredients

  • Classic TOB crust

  • 3 baking potatoes, (don't peel)

  • 1 diced jalapeno pepper

  • 1/4 cup vegetable oil

  • Pinch of salt and pepper

  • 1/2 cup sour cream

  • 1 cup cheddar cheese, shredded

  • 1 cup mozzarella cheese, shredded

  • 6 slices of cooked and chopped bacon

  • 1/2 cup diced green onion,

 






Directions

  1. Preheat oven to 450

  2. Line a baking sheet with parchment paper.

  3. Slice potatoes and add them and diced jalapeno in a large bowl.

  4. Drizzle with the vegetable oil and add some salt and pepper.

  5. Toss until well combined.

  6. Spread potato mixture on baking sheet in a single layer.

  7. Bake in preheated for 14-16 minutes or until potatoes are tender and just starting to turn golden on the edges (do not over-cook).

  8. Remove from oven and allow to cool on the baking sheet for 15-25 minutes.

  9. Turn oven to 500

  10. Roll out pizza dough and top it with sour cream, potatoes, cheese and about half of the bacon & green onion.

  11. Cook for 9-14 minutes or until the crust is thoroughly cooked.

  12. Top with remaining bacon and green onion.

  13. Serve immediately.
