Ingredients
3 baking potatoes, (don't peel)
1 diced jalapeno pepper
1/4 cup vegetable oil
Pinch of salt and pepper
1/2 cup sour cream
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
6 slices of cooked and chopped bacon
1/2 cup diced green onion,
Directions
Preheat oven to 450
Line a baking sheet with parchment paper.
Slice potatoes and add them and diced jalapeno in a large bowl.
Drizzle with the vegetable oil and add some salt and pepper.
Toss until well combined.
Spread potato mixture on baking sheet in a single layer.
Bake in preheated for 14-16 minutes or until potatoes are tender and just starting to turn golden on the edges (do not over-cook).
Remove from oven and allow to cool on the baking sheet for 15-25 minutes.
Turn oven to 500
Roll out pizza dough and top it with sour cream, potatoes, cheese and about half of the bacon & green onion.
Cook for 9-14 minutes or until the crust is thoroughly cooked.
Top with remaining bacon and green onion.
Serve immediately.
