Ingredients
Crust
2 cooked sweet potato
1 egg
1 cup mozzarella cheese
1 cup almond flour
1 1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon sea salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes
Toppings
1 1/4 cup of prepared pesto
2 cooked and sliced chicken breast
1/2 cup shredded mozzarella cheese
1/4 cup chopped walnuts
Instructions
Preheat oven to 400
Add 2 cups sweet potato on a plate and mash it with a fork until all the lumps are removed.
Press the sweet potato with paper towels removing as much water as possible.
Whisk egg and combine sweet potato into the bowl. Add cheese gradually.
In a separate bowl combine almond flour, oregano, garlic powder, salt, pepper, and red pepper flakes.
Stir the dry ingredient mixture into the sweet potato mixture.
Place the mixture on a parchment lined backing sheet. Using the back of a rubber spatula, spread the dough evenly.
Bake the crust for 35-40 minutes or until the crust is no longer moist in the center.
Take the crust out and place pesto, chicken, mozzarella, and walnuts on top.
Bake for another 8-10 minutes or until the crust is melted.
Allow the pizza to sit for a couple minutes before cutting and enjoying!
