Chicken Pot Pie Pizza

Ingredients

  • T.O.B. pizza dough

  • 1 large boneless skinless chicken breast

  • 2 tablespoons butter

  • 1 cup pearl onion

  • 2 carrots diced

  • 1 teaspoon fresh thyme chopped

  • 1 teaspoon kosher salt

  • 2/4 teaspoon black pepper

  • 3 tablespoons flour

  • 1 cup chicken broth

  • 1/2 cup milk

  • 1/3 cup frozen peas

  • 1/3 cup frozen corn

  • 2 cups shredded mozzarella cheese

  • 1/4 cup shredded parmesan cheese

 

Instructions

  1. Preheat oven to 450 degrees.

  2. Cook chicken breast thoroughly and dice into small cubes.

  3. Melt butter in at medium heat.

  4. Add diced onion and carrot, salt, pepper, and thyme when butter is melted.

  5. Saute the vegetables for about 4 minutes until they have softened.

  6. Stir in the flour until combined then let it cook for another minute.

  7. Whisk in the chicken broth and milk.

  8. Continue to whisk the sauce for another 4-5 minutes or until it becomes thick.

  9. Once thick add in the frozen corn, peas, and diced chicken and cook for another minute.

  10. Remove from the heat.

  11. Roll out the pizza dough out.

  12. Spread the chicken pot pie mixture onto the dough.

  13. Spread the shredded mozzarella and parmesan cheese on top.

  14. Bake in the oven for 10-15 minutes or until the cheese is melted and crust is cooked thuroughly.
