Ingredients
One T.O.B. go to Dough
2 tablespoons olive oil
2 onions, sliced
1 teaspoon of thyme leaves
2 garlic cloves, minced
Salt and pepper
3/4 cup ricotta
1/2 pound of wilted spinach
1/2 cup parmesan cheese
1 egg yolk
Instructions
Preheat oven to 500
Over medium heat, warm up the olive oil.
Add onion and stir frequently for 10 minutes or until browned and tender.
Add thyme, garlic, salt & pepper and cook for another 3-5 minutes.
Turn heat to lower and cover with lid. Cook for another 10 minutes while stirring frequently (Onions should be really soft and brown).
Heat a medium pan and add a little olive oil and spinach. stir constantly until the spinach is wilted.
Roll Dough out and spread sauce out evenly.
In a bowl, combine the ricotta, egg yolk, parmesan and spinach. Pour over the dough and spread evenly leaving some space for the crust.
Spread the onions over the ricotta mixture.
Bake pizza in the oven for 10-14 minutes or until the crust is crispy.
