Caramelized Onion Ricotta Pizza

Ingredients

- One T.O.B. go to Dough 
- 2 tablespoons olive oil 
- 2 onions, sliced 
- 1 teaspoon of thyme leaves 
- 2 garlic cloves, minced 
- Salt and pepper 
- 3/4 cup ricotta 
- 1/2 pound of wilted spinach 
- 1/2 cup parmesan cheese 
- 1 egg yolk 
Instructions
- Preheat oven to 500 
- Over medium heat, warm up the olive oil. 
- Add onion and stir frequently for 10 minutes or until browned and tender. 
- Add thyme, garlic, salt & pepper and cook for another 3-5 minutes. 
- Turn heat to lower and cover with lid. Cook for another 10 minutes while stirring frequently (Onions should be really soft and brown). 
- Heat a medium pan and add a little olive oil and spinach. stir constantly until the spinach is wilted. 
- Roll Dough out and spread sauce out evenly. 
- In a bowl, combine the ricotta, egg yolk, parmesan and spinach. Pour over the dough and spread evenly leaving some space for the crust. 
- Spread the onions over the ricotta mixture. 
- Bake pizza in the oven for 10-14 minutes or until the crust is crispy. 
- Serve and enjoy!
