Butternut Squash Pizza

Butternut Boi

Ingredients

  • Pizza dough

  • 1 tablespoon olive oil

  • 1 1/2 pounds butternut squash, peeled and cut into 1/2 inch cubes

  • 1/4 cup green onion

  • 4 cloves garlic, minced

  • 1 cup chicken broth

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon dried sage

  • 1/2 cup heavy cream

  • 1 cup shredded turkey

  • 1 cup mozzarella cheese

  • 1 cup roasted & halved brussels sprouts

  • Cranberry sauce for drizzle

 

Instructions


*Make sure that you precook the brussels sprouts

  1. Preheat oven to 500

  2. Heat the oil on medium heat.

  3. Add the squash, green onion, and garlic to pan then cook for 5 minutes (or until vegetables start to soften)

  4. Add the chicken broth, salt, pepper, nutmeg, and sage and stir.

  5. Cover and simmer over medium heat for 10-12 minutes, or until the squash is tender.

  6. Transfer the sauce to a blender and blend until smooth (or mash it with a fork until texture is smooth).

  7. Stir in the cream and set aside.

  8. Roll out the dough onto pan and add toppings in this order; Squash sauce, turkey, cheese, brussels sprouts, cranberry sauce.

  9. Bake in the oven for 10 minutes or until the crust is fully cooked through.

  10. Serve and enjoy!
