Butternut Boi
Ingredients
1 tablespoon olive oil
1 1/2 pounds butternut squash, peeled and cut into 1/2 inch cubes
1/4 cup green onion
4 cloves garlic, minced
1 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1/2 teaspoon dried sage
1/2 cup heavy cream
1 cup shredded turkey
1 cup mozzarella cheese
1 cup roasted & halved brussels sprouts
Cranberry sauce for drizzle
Instructions
*Make sure that you precook the brussels sprouts
Preheat oven to 500
Heat the oil on medium heat.
Add the squash, green onion, and garlic to pan then cook for 5 minutes (or until vegetables start to soften)
Add the chicken broth, salt, pepper, nutmeg, and sage and stir.
Cover and simmer over medium heat for 10-12 minutes, or until the squash is tender.
Transfer the sauce to a blender and blend until smooth (or mash it with a fork until texture is smooth).
Stir in the cream and set aside.
Roll out the dough onto pan and add toppings in this order; Squash sauce, turkey, cheese, brussels sprouts, cranberry sauce.
Bake in the oven for 10 minutes or until the crust is fully cooked through.
Serve and enjoy!
