Beer Cheese Pizza

The Cheesy Helga
Ingredients

- Crust 
- 1 1/4 cups warm (125 degrees) water 
- 3 tbsp brown sugar 
- 1 1/2 tsp instant yeast or yeast packet 
- 3 cups all-purpose flour 
- 3-4 inches water 
- 1/2 cup baking soda 
- 2-3 tbsp melted butter 
- Course salt 
- Sauce 
- 3 tbsp butter 
- 3 tbsp all purpose flour 
- 1 cup beer 
- 1 cup sharp white cheddar cheese 
- 1 cup Monterrey Jack cheese 
- 1/4 cup milk 
- 2 tsp smoked paprika 
- 1/4 tsp cayenne pepper 
- 2 tsp Dijon mustard 
Directions
- Sauce 
- Melt butter over medium heat and whisk in flour until smooth (stirring constantly). 
- Pour in beer slowly while whisking. Let the mixture come to a simmer. 
- Add cheeses, milk, mustard, paprika, & cayenne. 
- Continue to stir with a whisk while the cheese is melting. 
- Once cheese is melted, let it come to simmer and take it off heat. 
- Dough 
- Preheat the oven to 450 
- Add water, yeast, & sugar and allow the yeast to sit for about five minutes (until it starts to foam). 
- Mix the ingredients above with flour and mix with dough hook in electric mixer. 
- Allow the dough to sit for 20 minutes. 
- In a large pan bring water and baking soda to a boil. 
- Cut dough into pieces and and roll out into the shape of the crust (Make it as big as your pan will allow. 
- Cook in the water for 40 seconds. 
- Smoosh the dough pieces together to get a full pizza crust (don't re-roll, just press the two sides together). 
- Allow the dough to rest for 20 min. on paper towels. 
- Brush melted butter on the pizza dough and sprinkle salt across the dough. 
- Cook for 8 minutes. 
- Add Sauce on top. and cook for another 5 minutes. 
- Slice, Serve, and Enjoy!
